  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy), casings removed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chopped kale, stems removed
  • 45 medium russet potatoes, thinly sliced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

For Serving:

  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, about 6–8 minutes. Remove sausage and set aside.
  2. Sauté Onion and Garlic: In the same pot, cook diced onion until softened. Add garlic and cook for 30 seconds.
  3. Add Potatoes and Broth: Add sliced potatoes and chicken broth to the pot. Bring to a boil, then simmer until potatoes are tender.
  4. Combine Ingredients: Return sausage to the pot, add kale, and stir until wilted. Stir in cream and season with salt, pepper, and red pepper flakes if desired.
  5. Serve: Simmer for 5 more minutes. Serve hot, topped with grated Parmesan if desired.
