Instructions

  1. Preheat oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla. Stir in the grated zucchini.
  3. Prepare dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
