Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and grease/line a 9×5-inch loaf pan with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and oregano.
  3. Combine Wet Ingredients: In a separate bowl, whisk eggs, buttermilk, and olive oil until well combined.
  4. Combine Ingredients: Stir the wet ingredients into the dry ingredients just until moistened. Fold in the shredded zucchini, cheddar cheese, Parmesan cheese, and green onion (if using).
  5. Bake: Pour the batter into the prepared loaf pan, smooth the top, and bake for 50–60 minutes until a toothpick inserted in the center comes out clean.
