Zapekanka is a delightful Ukrainian cheesecake made with farmer’s cheese, eggs, sugar, and a hint of vanilla. This creamy and slightly tangy dessert is easy to make and perfect for any occasion.

Filling:

  • 2 cups farmer’s cheese (or well-drained ricotta)
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1/4 cup semolina (or all-purpose flour)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup raisins (optional)

Other:

  • butter for greasing the pan
  • powdered sugar for serving (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9-inch round or square baking dish with butter.
  2. Prepare the filling: In a large bowl, mix farmer’s cheese, eggs, sugar, sour cream, semolina, vanilla extract, and salt until smooth. Fold in raisins if desired.
  3. Bake: Pour the batter into the dish, smooth the top, and bake for 40–45 minutes until golden and set.
  4. Serve: Allow to cool before slicing. Enjoy warm or chilled, dusted with powdered sugar.

Notes

  • For a creamier texture, blend the farmer’s cheese in a food processor before mixing.
