1pound boneless, skinless chicken breasts, cubed
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
2 cans white beans, drained and rinsed
1 can diced green chilies
4cups chicken broth
1 teaspoon cumin
1 teaspoon dried oregano
1/2 teaspoon chili powder
Salt and pepper to taste
For Serving:
Sour cream
Shredded cheese
Fresh cilantro, chopped
Lime wedges
Instructions
Cook the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned.
Add Ingredients: Add the onion and garlic to the pot and cook until softened. Stir in the white beans, green chilies, chicken broth, cumin, oregano, and chili powder. Season with salt and pepper.
