Crostini:
1 French baguette (sliced into 1/2-inch pieces)
2 tablespoons olive oil (for brushing)
Whipped Feta:
8oz feta cheese (crumbled)
1/4cup cream cheese (softened)
2 tablespoons Greek yogurt or sour cream
1 tablespoon lemon juice
1 teaspoon lemon zest
1/4 teaspoon black pepper
Hot Honey:
1/4cup hot honey (store-bought or homemade)
chopped fresh thyme or parsley for garnish (optional)
crushed red pepper flakes (optional, for added heat)
Optional Hot Honey (Homemade):
1/4cup honey
1/2–1 teaspoon red pepper flakes
pinch of salt
Instructions
To Make the Crostini: Preheat the oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush both sides lightly with olive oil. Toast in the oven for 8–10 minutes, flipping halfway through, until golden and crisp. Let cool slightly.
To Make the Whipped Feta: In a food processor, combine feta, cream cheese, Greek yogurt, lemon juice, lemon zest, and black pepper. Blend until smooth and creamy, scraping down the sides as needed. Chill until ready to use.
To Make Hot Honey (if homemade): In a small saucepan, warm honey over low heat. Stir in red pepper flakes and a pinch of salt. Simmer gently for 1–2 minutes, then remove from heat. Let sit for 5–10 minutes before straining (if desired).
To Assemble: Spread a generous layer of whipped feta on each crostini. Drizzle with hot honey and garnish with fresh thyme or parsley and a pinch of red pepper flakes if desired. Serve immediately.
