  • 1 cup cooked rice (optional)
  • 4 large flour tortillas (burrito-size)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 (10 oz) can red enchilada sauce
  • 1 (10 oz) can green enchilada sauce or additional red
  • Chopped lettuce, diced tomatoes, sour cream, and green onions (for garnish)

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C).
  2. Cook Beef: In a skillet, cook ground beef and onion until browned. Add garlic, taco seasoning, and water. Simmer until thickened. Stir in refried beans and cooked rice.
  3. Assemble Burritos: Fill tortillas with beef mixture, sprinkle with cheese, and roll up burrito-style. Place in a baking dish.
  4. Add Sauces: Mix enchilada sauces and pour over burritos. Top with remaining cheese.
  5. Bake: Bake for 20–25 minutes until cheese is melted and bubbly.
