Ground Beef Mixture:

  • 2 pounds ground beef

Vegetables:

  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery ribs, chopped

Canned Goods:

  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed

Seasonings:

  • 1 cup water
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon oregano

Instructions

  1. Brown the Beef: In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add Vegetables: Add onion, bell pepper, and celery. Sauté for 5–7 minutes until tender.
  3. Mix Ingredients: Stir in diced tomatoes, tomato sauce, tomatoes with green chilies, beans, and water. Add seasonings.
  4. Simmer: Bring to a simmer, then cover and simmer on low for 1–1½ hours, stirring occasionally.
  5. Adjust and Serve: Adjust seasoning to taste before serving.

Notes

  • For extra spice, add cayenne pepper or hot sauce.
  • Chili tastes better the next day and freezes well for up to 3 months.
