Potato Salad:

  • 2 lbs baby red potatoes (halved)

Dressing:

  • 6 slices bacon (chopped)
  • 1/2 cup diced yellow onion
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook Potatoes: Boil potatoes until tender, then drain.
  2. Place the potatoes in a large pot, cover with water, and add a generous pinch of salt. Bring to a boil and cook for 12–15 minutes until fork-tender. Drain and set aside.
