These Butternut Squash Lasagna Roll-Ups are a delightful twist on classic lasagna, featuring a cozy and veggie-packed filling rolled up in lasagna noodles and baked to perfection. Creamy butternut squash, ricotta, and spinach come together in a flavorful dish that’s perfect for a comforting meal.

Ingredients

LAsagna Noodles:

10 lasagna noodles

Butternut Squash Filling:

2 cups butternut squash purée (roasted and mashed or canned), 1 cup ricotta cheese, 1/4 cup grated Parmesan cheese, 1 egg, 1 garlic clove (minced), 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon nutmeg, 2 cups baby spinach (sautéed)

Additional Ingredients:

1 tablespoon olive oil, 1 cup shredded mozzarella cheese, 1 cup béchamel or Alfredo sauce (store-bought or homemade), fresh sage or parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Cook Noodles: Cook lasagna noodles until al dente, then drain and lay flat on a parchment-lined surface.
  3. Prepare Filling: Mix butternut squash purée, ricotta, egg, Parmesan, garlic, salt, pepper, nutmeg, and sautéed spinach until smooth.
  4. Assemble Roll-Ups: Spread filling onto each noodle, then roll tightly.
  5. Layer and Bake: Spread sauce on the bottom of a baking dish, place roll-ups seam-side down, top with sauce, mozzarella, cover with foil, and bake for 25 minutes. Uncover and bake for an additional 10 minutes.
  6. Serve: Let rest for 5 minutes before serving. Garnish with fresh sage or parsley if desired.
