  • 1 tablespoon apple cider vinegar
  • 1/4 cup melted coconut oil or vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Wet Ingredients: In a separate bowl or measuring cup, mix the almond milk and apple cider vinegar. Let sit for 5 minutes to create a vegan “buttermilk.” Add the melted coconut oil and vanilla extract to the wet mixture, then pour into the dry ingredients.
  3. Cooking: Preheat your waffle iron and lightly grease if needed. Pour batter into the preheated waffle iron and cook according to the manufacturer’s instructions until golden and crisp.
