Description

These Vegan No Bake Christmas Almond Balls are a festive, gluten-free treat made with wholesome ingredients like almonds, coconut, and maple syrup. Perfect for holiday gatherings or a healthy snack.


Ingredients

  • 1 cup almond flour
  • 1/2 cup shredded coconut (unsweetened)
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 2 tbsp coconut oil (melted)
  • 2 tbsp chopped dried cranberries (optional)
  • Extra shredded coconut for rolling

Instructions

  1. In a large bowl, mix almond flour, shredded coconut, salt, and cinnamon.
  2. Add in almond butter, maple syrup, vanilla extract, and melted coconut oil. Stir until well combined.
  3. Fold in chopped dried cranberries if using.
  4. Chill the mixture in the refrigerator for 20 minutes to firm up.
  5. Once chilled, roll the mixture into small balls using your hands.
  6. Roll each ball in shredded coconut to coat.
  7. Store in an airtight container in the refrigerator until ready to serve.

Notes

  • These can be made ahead and stored for up to a week in the fridge.
  • Use a cookie scoop for evenly sized balls.
  • You can substitute maple syrup with agave nectar if desired.
