- 1 cup almond flour
- 1/2 cup shredded coconut (unsweetened)
- 1/4 cup maple syrup
- 1/4 cup almond butter
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 2 tbsp coconut oil (melted)
- 2 tbsp chopped dried cranberries (optional)
- Extra shredded coconut for rolling
Instructions
- In a large bowl, mix almond flour, shredded coconut, salt, and cinnamon.
- Add in almond butter, maple syrup, vanilla extract, and melted coconut oil. Stir until well combined.
- Fold in chopped dried cranberries if using.
- Chill the mixture in the refrigerator for 20 minutes to firm up.
- Once chilled, roll the mixture into small balls using your hands.
- Roll each ball in shredded coconut to coat.
- Store in an airtight container in the refrigerator until ready to serve.
Notes
- These can be made ahead and stored for up to a week in the fridge.
- Use a cookie scoop for evenly sized balls.
- You can substitute maple syrup with agave nectar if desired.
