  • 2 cups whole milk
  • 3 large egg yolks, beaten
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 3 ripe bananas, sliced

For the Topping:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a pie dish and bake until golden.
  2. Make the Filling: In a saucepan, combine sugar, flour, salt, and milk. Cook until thickened. Stir a little into the beaten egg yolks, then return all to the saucepan. Bring to a gentle boil, remove from heat, add butter and vanilla. Cool slightly, then add sliced bananas.
  3. Assemble the Pie: Pour the filling into the crust. Chill in the fridge until set.
  4. Prepare the Topping: Whip cream with powdered sugar and vanilla until stiff peaks form. Spread over the pie.
