For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 6 tbsp butter, melted

- 3/4 cup sugar
- 1/3 cup all-purpose flour
- 1/4 tsp salt
- 2 cups whole milk
- 3 large egg yolks, beaten
- 2 tbsp butter
- 1 tsp vanilla extract
- 3 ripe bananas, sliced
For the Topping:
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a pie dish and bake until golden.
- Make the Filling: In a saucepan, combine sugar, flour, salt, and milk. Cook until thickened. Stir a little into the beaten egg yolks, then return all to the saucepan. Bring to a gentle boil, remove from heat, add butter and vanilla. Cool slightly, then add sliced bananas.
- Assemble the Pie: Pour the filling into the crust. Chill in the fridge until set.
- Prepare the Topping: Whip cream with powdered sugar and vanilla until stiff peaks form. Spread over the pie.
