  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups whole milk
  • 2 tablespoons active dry yeast
  • 1/2 cup warm water (110°F)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon salt
  • 2 large eggs
  • 6 cups all-purpose flour (plus more as needed)

Filling:

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1/2 cup chopped nuts or raisins (optional)

Additional:

  • Cream cheese frosting or glaze of choice

Instructions

  1. Prepare Dough: Whisk vanilla pudding mix and milk until thickened. Dissolve yeast in warm water. Combine yeast mixture, sugar, melted butter, salt, eggs with pudding mix. Gradually add flour to form a soft dough. Knead for 8-10 minutes. Let rise for 1 hour.
  2. Fill and Shape Rolls: Roll out dough, spread softened butter, sprinkle brown sugar-cinnamon mixture, add nuts/raisins. Roll dough, slice into 12 pieces, place in baking dish. Let rise for 30–45 minutes.
  3. Bake: Preheat oven to 350°F. Bake rolls for 25–30 minutes. Cool slightly before frosting.

Notes

  • For a lighter dough, use bread flour in place of all-purpose.
  • These rolls can be made the night before and refrigerated before the second rise—just bring them to room temperature before baking.
