Dough:
1 package (3.4 oz) instant vanilla pudding mix
2cups whole milk
2 tablespoons active dry yeast
1/2cup warm water (110°F)
1/2cup granulated sugar
1/2cup unsalted butter (softened)
1 teaspoon salt
2 large eggs
6cups all-purpose flour
Filling:
1/2cup unsalted butter (melted)
1cup brown sugar
2 tablespoons ground cinnamon
Frosting:
4ounces cream cheese (softened)
1/4cup unsalted butter (softened)
1 1/2cups powdered sugar
1/2 teaspoon vanilla extract
2–3 tablespoons milk (as needed)
Instructions
Prepare the Dough: Mix pudding mix and milk. Dissolve yeast in warm water. Combine sugar, butter, salt, eggs, and pudding. Add flour gradually to form a dough. Knead and let rise.
Assemble Rolls: Roll out dough, spread with melted butter, sugar, and cinnamon. Roll up, slice, and place in a baking dish. Let rise.
Bake and Frost: Bake rolls, prepare frosting with cream cheese, butter, sugar, vanilla, and milk. Spread frosting over warm rolls.
Notes
Best served warm.
Can be prepared the night before, refrigerated, and baked the next morning. Allow to come to room temperature before baking if chilled.
