Vanilla French Beignets Recipe

Light and airy vanilla-flavored French beignets that are deep-fried to golden perfection and dusted with powdered sugar. Perfect for a delightful breakfast or dessert.

  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm water (110°F/45°C)
  • 3/4 cup warm milk
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 3 tablespoons unsalted butter, softened
  • 3 1/2 cups all-purpose flour
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a small bowl, dissolve the yeast in warm water and let sit for 5–10 minutes until foamy.
  2. In a large bowl, combine the warm milk, sugar, salt, vanilla extract, egg, and butter.
  3. Add the yeast mixture to the bowl and stir to combine.
  4. Gradually add the flour, mixing until a soft dough forms.
  5. Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover, and let rise in a warm place for 1–1.5 hours, or until doubled in size.
  7. Punch down the dough and roll it out on a floured surface to about 1/4 inch thickness.
  8. Cut into 2-inch squares and place on a parchment-lined tray. Let rest for 30 minutes.
  9. Heat oil in a deep fryer or large pot to 350°F (175°C).
  10. Fry the beignets in batches for 1–2 minutes on each side, or until golden brown.
  11. Remove and drain on paper towels. Dust generously with powdered sugar before serving.

  • You can fill the beignets with custard or jam for variation.
