  • 2 cups heavy cream
  • 1 vanilla bean (or 2 teaspoons vanilla bean paste)
  • 5 large egg yolks
  • 1/2 cup granulated sugar, plus more for topping
  • Pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C).
  2. Infuse cream: Heat cream and vanilla in a saucepan until steaming. Let vanilla infuse for 10–15 minutes.
  3. Prepare custard: Whisk yolks, sugar, and salt. Slowly pour in warm cream, whisking constantly. Strain custard.
  4. Bake: Divide custard into ramekins, place in a water bath, and bake for 35–40 minutes.
  5. Chill and caramelize: Cool, refrigerate for 4 hours, sprinkle sugar on top, caramelize with a torch, and serve.
