For the Crust:
1 1/2cups graham cracker crumbs
1/3cup melted butter
2 tablespoons granulated sugar
For the Filling:
2 1/2cups cream cheese (softened)
1cup powdered sugar
1 teaspoon vanilla extract
1 tablespoon lemon juice
1cup heavy cream (cold)
2 ripe mangoes (peeled and pureed)
1 tablespoon unflavored gelatin
1/4cup cold water
Fresh mango slices for garnish (optional)
Instructions
Prepare the Crust: Mix graham cracker crumbs, melted butter, and granulated sugar. Press into a 9-inch springform pan and chill.
Bloom the Gelatin: Sprinkle gelatin over cold water, dissolve, and cool.
Make the Filling: Beat cream cheese, sugar, vanilla, and lemon juice. Whip cream separately, fold into cream cheese mixture. Add mango puree and gelatin.
Set the Cake: Pour filling over crust, refrigerate for at least 6 hours.
Finish and Serve: Garnish with mango slices before serving.
Notes
For a firmer texture, increase gelatin to 1½ tablespoons.
Use canned mango pulp if fresh mangoes are unavailable.
