For the crust:
1 and 1/2 cups crushed chocolate graham crackers
1/4cup granulated sugar
6 tablespoons unsalted butter, melted
For the filling:
3 (8 oz) packages cream cheese, softened
1cup creamy peanut butter
1cup granulated sugar
1/2cup sour cream
1 teaspoon vanilla extract
3 large eggs
For the topping:
1/2cup heavy cream
1/2cup semi-sweet chocolate chips
Chopped roasted peanuts for garnish (optional)
Instructions
Preheat the oven: Preheat the oven to 325°F (163°C).
Prepare the crust: Mix crushed graham crackers, sugar, and melted butter. Press into a pan and bake for 8 minutes.
Make the filling: Beat cream cheese until smooth, add peanut butter, sugar, sour cream, and vanilla. Add eggs one at a time.
Bake the cheesecake: Pour filling over crust and bake for 55–65 minutes. Cool in the oven for 1 hour, then chill for at least 4 hours.
Prepare the topping: Heat cream, add chocolate chips, stir until smooth. Spread over cheesecake and chill for 15 minutes.
Notes
For a crunchier base, use crushed peanut butter cookies instead of graham crackers.
Natural peanut butter is not recommended due to oil separation.
