For the crust:

  • 1 and 1/2 cups crushed chocolate graham crackers
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs

For the topping:

  • 1/2 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • Chopped roasted peanuts for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C).
  2. Prepare the crust: Mix crushed graham crackers, sugar, and melted butter. Press into a pan and bake for 8 minutes.
  3. Make the filling: Beat cream cheese until smooth, add peanut butter, sugar, sour cream, and vanilla. Add eggs one at a time.
  4. Bake the cheesecake: Pour filling over crust and bake for 55–65 minutes. Cool in the oven for 1 hour, then chill for at least 4 hours.
  5. Prepare the topping: Heat cream, add chocolate chips, stir until smooth. Spread over cheesecake and chill for 15 minutes.

Notes

  • For a crunchier base, use crushed peanut butter cookies instead of graham crackers.
  • Natural peanut butter is not recommended due to oil separation.
