Cheesecake Crust:

  • 6 tbsp unsalted butter (melted)

Cheesecake Filling:

  • 3 (8 oz) packages cream cheese (room temperature)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp coconut extract
  • 1/2 cup canned coconut milk (full fat)
  • 1/2 cup sour cream
  • 1/2 cup sweetened shredded coconut (for filling)

Optional: whipped cream and toasted coconut for topping

Instructions

  1. Prepare the Crust: Preheat oven to 325°F (163°C). Combine graham cracker crumbs, toasted coconut, 1/3 cup sugar, and melted butter. Press into a springform pan and bake for 10 minutes.
  2. Make the Filling: Beat cream cheese until smooth. Add sugar, eggs, vanilla, coconut extracts, coconut milk, and sour cream. Fold in shredded coconut.
  3. Bake: Pour filling over crust. Bake in a water bath for 60–70 minutes. Let cool in the oven for 1 hour, then chill for at least 4 hours.
  4. Serve: Top with whipped cream and toasted coconut before serving.
