Potatoes:

  • 4 large russet potatoes, scrubbed and dried
  • 2 tablespoons olive oil

Filling:

  • 4 tablespoons unsalted butter
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese, divided
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, thinly sliced
  • Salt and black pepper to taste

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C).
  2. Bake Potatoes: Rub potatoes with olive oil, place on a baking sheet, and bake for 45–60 minutes until fork-tender. Let cool slightly.
  3. Prepare Filling: Slice each potato in half lengthwise, scoop out the flesh into a bowl. Add butter, sour cream, milk, garlic powder, salt, and pepper. Mash until smooth.
  4. Add Ingredients: Stir in half of the cheddar cheese, crumbled bacon, and green onions.
  5. Refill Potatoes: Spoon the filling back into the potato shells, top with remaining cheese.
  6. Final Bake: Bake for 15–20 minutes until heated through and cheese is melted. Serve warm.
