Ingredients

Chicken:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Sauce:

  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1 tablespoon fresh basil, chopped (optional)

Instructions

  1. Season the chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
  2. Sear the chicken: Heat olive oil in a large skillet over medium heat. Sear the chicken for 5–6 minutes per side until golden and cooked through. Remove chicken from skillet and set aside.
  3. Prepare the sauce: In the same skillet, melt butter and sauté the garlic for 1 minute. Add sun-dried tomatoes and cherry tomatoes and cook for 2–3 minutes. Pour in the chicken broth and stir, scraping up any browned bits. Add the heavy cream and Parmesan cheese, stirring until smooth and slightly thickened, about 3–4 minutes.
  4. Finish the dish: Stir in the spinach and cook until wilted. Return the chicken to the pan and spoon the sauce over the top. Simmer for 2–3 minutes. Garnish with chopped basil before serving if desired.

Notes

  • Serve with pasta, mashed potatoes, or crusty bread to soak up the creamy sauce.
  • Substitute half-and-half for a lighter version.
