  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted

For the Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 cup canned pumpkin
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves

For the Topping:

  • 1/2 cup caramel sauce
  • 1/2 cup chopped pecans
  • 1/2 cup chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Prepare the Crust: Preheat oven to 350°F. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  2. Make the Cheesecake Filling: In a large mixing bowl, beat cream cheese and sugar until smooth. Add pumpkin, eggs, vanilla, and spices. Mix until well combined. Pour over crust.
  3. Bake the Cheesecake: Bake for about 60 minutes or until the center is almost set. Remove from oven and cool completely.
  4. Add the Topping: Drizzle caramel sauce over the cheesecake. Sprinkle with chopped pecans. In a small saucepan, heat chocolate chips and cream until smooth. Drizzle over the top.
