Ingredients

Soup:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 8 cups low-sodium chicken or turkey broth

Additional:

  • 2 cups cooked turkey, shredded
  • 1 cup egg noodles or rice (optional)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil: In a large pot over medium heat, add olive oil. Sauté onion and garlic until fragrant.
  2. Add vegetables: Stir in carrots and celery, cook for 5 minutes.
  3. Season: Add thyme, oregano, and broth. Simmer until vegetables are tender.
  4. Finish soup: Add turkey and noodles/rice, simmer for 10 minutes. Season with salt and pepper.
  5. Serve: Stir in fresh parsley before serving.
