  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can (10 oz) enchilada sauce (red or green)
  • 1/2 cup salsa
  • 6 small corn tortillas, cut into strips
  • 1 cup shredded Mexican blend cheese

For Garnish:

  • Chopped fresh cilantro
  • Sliced green onions

Instructions

  1. Heat olive oil: In a large skillet over medium heat, add olive oil.
  2. Cook turkey: Add ground turkey and cook until browned, breaking it up with a spoon, about 5–7 minutes.
  3. Add onion and spices: Add diced onion and cook for 3 minutes. Stir in garlic, cumin, chili powder, paprika, salt, and pepper.
  4. Incorporate ingredients: Add black beans, corn, enchilada sauce, and salsa. Gently fold in tortilla strips.
  5. Simmer: Simmer for 5–7 minutes until slightly thickened. Sprinkle cheese over the top, cover, and cook for 2–3 more minutes until melted.
  6. Garnish and serve: Remove from heat and garnish with cilantro and green onions before serving.
