Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan or two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and coconut extracts.
  4. In a separate bowl, mix the coconut milk and sour cream. Add the dry ingredients to the butter mixture in three additions, alternating with the coconut milk mixture, starting and ending with the dry ingredients.
  5. Fold in the shredded coconut. Pour the batter into the prepared pan(s) and smooth the top. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat the butter until creamy, then gradually add powdered sugar. Mix in coconut milk, vanilla, coconut extract, and salt until smooth and fluffy.
