For the Coffee Soak:

  • 1/2 cup strong brewed coffee, cooled
  • 1 tablespoon coffee liqueur or dark rum (optional)
  • 1 tablespoon granulated sugar

  • 8 ounces mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

For Topping:

  • Unsweetened cocoa powder for dusting

Instructions

  1. Preheat Your Oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Prepare Cupcake Batter: Whisk together flour, baking powder, and salt. Cream butter and sugar, add eggs and vanilla, then mix in flour and milk. Divide batter into liners and bake for 18–20 minutes.
  3. Make Coffee Soak: Mix cooled coffee, sugar, and liqueur. Poke holes in cupcakes and spoon coffee mixture over them.
  4. Prepare Frosting: Beat mascarpone, cream, sugar, and vanilla until stiff peaks form. Pipe or spread onto cooled cupcakes.
