Instructions

  1. Prepare the Banana Bites: Line a baking sheet with parchment paper. Spread a small amount of peanut butter onto half of the banana slices, then top with the remaining slices to create banana ‘sandwiches.’
  2. Freeze the Bites: Place them on the baking sheet and freeze for 30–60 minutes until firm.
  3. Make the Chocolate Coating: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
  4. Coat the Bites: Dip each frozen banana bite into the melted chocolate, coating halfway or fully, then return to the parchment-lined tray.
  5. Set and Serve: Sprinkle with sea salt if desired. Freeze for another 15–20 minutes until set. Store in the freezer in an airtight container for up to 1 week.
