Description

The ULTIMATE Chickpea Melt Sandwich is a delicious and hearty vegetarian sandwich featuring a creamy, tangy mashed chickpea filling mixed with mayonnaise, dijon mustard, fresh herbs, and pickles. Chickpea Filling

  • 1 jar chickpeas (same as canned) (25 oz / 700 grams)
  • 3/4 cup low fat mayonnaise (180 grams)
  • 1 tbsp dijon mustard (15 grams)
  • 1/3 cup chopped red onion (60 grams)
  • 1 clove garlic (finely grated)
  • 1/4 cup chopped dill pickles (35 grams)
  • 2 tbsp chopped parsley (8 grams)
  • 2 tsp lemon juice (10 ml)
  • Sea salt & black pepper, to taste

Sandwich Assembly

  • 8 slices sourdough bread
  • 4 slices cheddar cheese
  • 2 tbsp butter (28 grams)


Instructions

  1. Prepare Chickpeas: Drain the jarred chickpeas in a colander and rinse thoroughly under cold water. Shake off any excess water, then transfer the chickpeas to a large bowl. Using a potato masher or a large fork, mash the chickpeas until well mashed but still slightly chunky for texture.
  2. Mix the Filling: Into the mashed chickpeas, add the low fat mayonnaise, dijon mustard, chopped red onion, finely grated garlic, chopped dill pickles, chopped parsley, and lemon juice. Season with sea salt and black pepper to taste. Mix everything together until the ingredients are fully combined and the mixture is creamy.
  3. Assemble Sandwiches: Butter one side of each slice of sourdough bread. Place 4 slices butter side down on parchment paper or clean surface. Evenly spread the chickpea mixture over each slice, then place one slice of cheddar cheese on top of the mixture. Top with the remaining bread slices, butter side up.
  4. Heat the Pan: Preheat a nonstick frying pan over medium heat until hot but not smoking.
