  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey
  • 1 red bell pepper, diced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/2 cup water or low-sodium chicken broth

Instructions

  1. Heat the olive oil: In a large pot over medium heat, sauté the onion until softened. Add garlic and cook until fragrant.
  2. Cook the turkey: Brown the ground turkey, breaking it up. Add bell pepper, spices, salt, and pepper.
  3. Add remaining ingredients: Stir in tomatoes, beans, corn, and water/broth. Simmer for 25–30 minutes.
