3 large russet potatoes
1 tablespoon olive oil
1/2 teaspoon salt (or to taste)

Instructions
Peel (optional) and cut potatoes into 1/4-inch thick matchsticks.
Soak the potato slices in cold water for at least 30 minutes to remove excess starch. Drain and pat completely dry with paper towels.
In a large bowl, toss dried potatoes with olive oil, salt, pepper, and optional seasonings.
Preheat the air fryer to 380°F (195°C).
Place fries in the air fryer basket in a single layer (cook in batches if necessary).
Air fry for 15-20 minutes, shaking the basket halfway through, until fries are golden and crispy.
