  • 1 tablespoon coconut oil
  • 1 pound boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons red curry paste
  • 1 teaspoon ground turmeric
  • 1 (13.5 oz) can full-fat coconut milk
  • 3 cups chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar

Additional Ingredients:

  • 1 red bell pepper (sliced)
  • 1 cup shredded carrots
  • 2 cups baby spinach or chopped kale
  • juice of 1 lime
  • salt and pepper to taste
  • chopped fresh cilantro and lime wedges for serving

Instructions

  1. Cook Chicken: In a large pot, cook chicken in coconut oil until browned. Remove and set aside.
  2. Sauté Aromatics: In the same pot, sauté onion, garlic, ginger, curry paste, and turmeric until fragrant.
  3. Simmer: Add coconut milk, broth, fish sauce, and sugar. Return chicken to the pot and simmer.
  4. Add Vegetables: Stir in bell pepper and carrots, cook until tender. Add spinach and wilt.
  5. Finish: Stir in lime juice, adjust seasoning, and serve hot with cilantro and lime wedges.

Notes

  • Add cooked rice noodles or jasmine rice for a heartier soup.
  • Adjust spice level by adding more or less curry paste.
