Egg Mixture:

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Other Ingredients:

  • 2 tbsp olive oil
  • 4 corn tortillas, cut into strips
  • 1/2 cup diced onion
  • 1 jalapeño, seeded and diced
  • 1/2 cup diced tomato
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 2 tbsp chopped fresh cilantro
  • Salsa and avocado slices for serving

Instructions

  1. Egg Mixture: In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Cook Tortilla Strips: In a large skillet over medium heat, heat olive oil and add tortilla strips. Cook until crispy and golden, about 5 minutes.
  3. Add Veggies: Add onion and jalapeño, sauté until softened, about 2 minutes. Stir in tomato and cook for another minute.
  4. Scramble Eggs: Pour the egg mixture into the skillet, stir gently to scramble with tortilla and veggies. Cook until eggs are just set.
  5. Add Cheese: Sprinkle cheese over the mixture and cook until melted. Remove from heat and top with cilantro.
  6. Serve: Serve immediately with salsa and avocado slices.

Notes

  • For spicier migas, leave the jalapeño seeds in or add hot sauce.
  • Great as a breakfast taco filling too!
