Teriyaki Sauce:

  • 1/4 cup mirin
  • 2 tablespoons sake (optional)
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Other:

  • 1 tablespoon vegetable oil
  • sesame seeds for garnish
  • sliced green onions for garnish

Instructions

  1. Prepare Teriyaki Sauce: Whisk together soy sauce, mirin, sake, brown sugar, honey, garlic, and ginger.
  2. Cook Chicken: Sear chicken thighs in vegetable oil until golden and cooked through.
  3. Combine: Make a cornstarch slurry, thicken the sauce, and return the chicken to the skillet.
  4. Serve: Simmer briefly, garnish with sesame seeds and green onions, and serve.

Notes

  • For a lighter version, use chicken breasts instead of thighs.
