  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger

For the Casserole:

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, cooked and shredded
  • 1 (12 oz) bag frozen stir-fry vegetables or 3 cups chopped fresh veggies (broccoli, bell pepper, carrots)
  • 2 cups cooked brown or white rice
  • Green onions and sesame seeds for garnish (optional)

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
