For the Casserole:

  • 2 cups cooked chicken (shredded or chopped)
  • 1 1/2 cups cooked brown or white rice
  • 2 cups frozen stir-fry vegetables (thawed)

For the Teriyaki Sauce:

  • 1/2 cup low-sodium soy sauce
  • 1/4 cup water
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic (minced)
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

For Garnish:

  • sesame seeds and sliced green onions

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Make the Teriyaki Sauce: In a small saucepan, combine soy sauce, water, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger. Simmer and thicken with cornstarch slurry.
  3. Assemble the Casserole: In a large bowl, mix chicken, rice, and vegetables. Pour teriyaki sauce over and stir to coat. Transfer to baking dish.
  4. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5–10 minutes until heated through.
  5. Garnish and Serve: Garnish with sesame seeds and green onions before serving.

Notes

  • Use rotisserie chicken for convenience.
  • Swap in fresh vegetables if preferred.
  • To make it spicy, add a dash of sriracha or red pepper flakes to the sauce.
