2pounds beef stew meat or sirloin tips
1 medium onion, chopped
2 cloves garlic, minced
For the Sauce:
1 can (10.5 ounces) cream of mushroom soup
1 packet (1 ounce) onion soup mix
2cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1/2 teaspoon black pepper
1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
For Serving:
12ounces egg noodles, cooked and drained
Chopped parsley for garnish (optional)
Instructions
Brown the Beef: In a large skillet over medium-high heat, brown the beef tips on all sides. Transfer the beef to the crockpot.
Prepare the Sauce: Add the chopped onion, garlic, cream of mushroom soup, onion soup mix, beef broth, Worcestershire sauce, thyme, and pepper to the crockpot. Stir to combine.
Cook: Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender.
Thicken the Sauce: If a thicker sauce is desired, stir in the cornstarch slurry during the last 30 minutes of cooking and let it simmer in the crockpot.
Serve: Serve the beef tips and gravy over cooked egg noodles and garnish with parsley if desired.
