Beef Tips:
2pounds beef stew meat or sirloin tips (cut into 1-inch cubes)
1 tablespoon olive oil

1 small onion, chopped
2 cloves garlic, minced
2cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon dried thyme
1/2 teaspoon black pepper
1 packet (1 ounce) onion soup mix
1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)
12ounces egg noodles
Chopped fresh parsley for garnish (optional)
Instructions
Sear the Beef: In a skillet over medium-high heat, heat the olive oil and sear the beef in batches until browned on all sides, about 2–3 minutes per batch. Transfer the beef to the crockpot.
Prepare the Broth: Add the chopped onion, garlic, beef broth, Worcestershire sauce, soy sauce, thyme, pepper, and onion soup mix to the crockpot. Stir to combine.
Cook: Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is tender.
Thicken the Sauce: Thirty minutes before serving, stir in the cornstarch slurry to thicken the sauce.
Serve: Cook the egg noodles according to package directions. Serve the beef tips over the noodles and garnish with fresh parsley if desired.

You can substitute mashed potatoes or rice for the egg noodles.
