  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)

  • 2 cloves garlic, minced
  • 1/4 cup finely chopped cucumber (seeds removed)
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh mint (optional)
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • 1/4 teaspoon dried oregano (optional)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 2 cups mixed salad greens or chopped romaine lettuce
  • 1/4 cup crumbled feta cheese (optional garnish)

Instructions

  1. In a large bowl, whisk together Greek yogurt, olive oil, lemon juice, red wine vinegar (if using), minced garlic, chopped cucumber, dill, mint (if using), salt, pepper, and oregano until smooth to make the tzatziki dressing.
  2. Add the cooked chicken to the dressing and toss gently to coat all pieces evenly.
  3. Fold in cherry tomatoes, red onion, and mixed greens until combined.
  4. Divide the salad among serving plates or bowls.
  5. Sprinkle each portion with crumbled feta cheese, if desired.
  6. Serve immediately or chill for 30 minutes in the refrigerator to enhance flavor melding.
  7. Store any leftovers in an airtight container in the fridge for up to 3 days.
