Ingredients
Scale
Main Ingredients
- 2 tablespoons olive oil
- 1 pound ground beef
- ¼ cup yellow onions, chopped
- ¼ cup taco seasoning (1 packet)
- 10 ounces Rotel tomatoes (diced tomatoes with green chilies)
- 8 ounces spaghetti noodles, uncooked
- 3 cups water
- 4 ounces cheddar cheese, shredded
- ½ cup cilantro, chopped
Instructions
- Heat oil: Heat 2 tablespoons of olive oil in a 12-inch skillet over medium heat to prepare for browning the beef and onions.
- Brown beef and onions: Add 1 pound ground beef and ¼ cup chopped yellow onions to the skillet. Cook until the beef is fully browned and the onions become translucent, stirring occasionally to crumble the meat.
- Add seasoning and ingredients: Stir in ¼ cup taco seasoning, 10 ounces Rotel tomatoes, 8 ounces uncooked spaghetti noodles, and 3 cups water into the skillet with the browned beef and onions.
- Simmer: Bring the mixture to a boil, then cover the skillet and reduce heat to low. Simmer gently for 15 minutes, allowing the spaghetti to cook in the seasoned liquid until tender.
- Add cheese and cilantro: Stir in half of the 4 ounces shredded cheddar cheese until melted and incorporated. Remove from heat and top the dish with the remaining cheese and ½ cup chopped cilantro before serving.
Notes
- Use a 12-inch skillet or similar wide pan to accommodate all ingredients and ensure even cooking.
- If you prefer a spicier dish, choose a hot variety of Rotel tomatoes or add extra taco seasoning.
- For a creamier texture, consider adding a splash of milk or cream with the cheese.
- Can be garnished with additional toppings such as sour cream, sliced jalapeños, or avocado slices.
- Leftovers can be refrigerated and reheated; add a splash of water when reheating to maintain moisture.
