Ingredients

Spaghetti:

8 oz spaghetti

Ground Beef:

1 lb ground beef

Taco Seasoning:

1 packet taco seasoning (or 2 tablespoons homemade)

Water:

1/2 cup water

Diced Tomatoes with Green Chiles:

1 (10 oz) can diced tomatoes with green chiles (undrained)

Tomato Sauce:

1/2 cup tomato sauce

Cheddar Cheese:

1 cup shredded cheddar cheese

Monterey Jack Cheese:

1/2 cup shredded Monterey Jack cheese

Garnish:

chopped cilantro or green onions for garnish (optional)

Instructions

  1. Cook the Spaghetti: Cook the spaghetti according to package instructions in salted water. Drain and set aside.
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 5–7 minutes. Drain excess grease if needed.
  3. Season the Beef: Stir in the taco seasoning and water, cooking for 2–3 minutes until slightly thickened.
  4. Add Tomatoes and Sauce: Add the diced tomatoes with green chiles and tomato sauce, stirring to combine.
  5. Combine: Reduce heat to low and stir in the cooked spaghetti. Toss to coat the noodles evenly with the sauce.
  6. Add Cheese: Sprinkle both cheeses over the top, cover, and let sit for 2–3 minutes until melted.
  7. Garnish and Serve: Garnish with chopped cilantro or green onions if desired and serve warm.

Notes

  • For extra heat, add jalapeños or hot sauce.
  • This recipe can also be baked: transfer to a baking dish, top with cheese, and bake at 375°F for 10 minutes.
