Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Soup Base:

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (10-ounce) can Rotel (diced tomatoes with green chilies)
  • 1 (1-ounce) packet taco seasoning
  • 1 (1-ounce) packet ranch seasoning mix
  • 2 cups beef broth

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Sliced jalapeños
  • Avocado
  • Chopped cilantro
  • Tortilla chips

Instructions

  1. Cook Ground Beef: In a large pot, cook ground beef over medium heat until browned. Drain excess grease.
  2. Sauté Onion and Garlic: Add chopped onion and minced garlic to the pot. Sauté until softened.
  3. Add Ingredients: Stir in black beans, kidney beans, corn, diced tomatoes, Rotel, taco seasoning, ranch seasoning, and beef broth.
  4. Simmer: Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes, stirring occasionally.
  5. Adjust Seasoning: Taste and adjust seasoning as needed.
  6. Serve: Serve hot with desired toppings.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
