Ground Beef Mixture:
1pound ground beef
1 small onion, chopped
2 cloves garlic, minced
Soup Base:
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can corn, drained
1 (14.5-ounce) can diced tomatoes
1 (10-ounce) can Rotel (diced tomatoes with green chilies)
1 (1-ounce) packet taco seasoning
1 (1-ounce) packet ranch seasoning mix
2cups beef broth
Optional Toppings:
Shredded cheese
Sour cream
Sliced jalapeños
Avocado
Chopped cilantro
Tortilla chips
Instructions
Cook Ground Beef: In a large pot, cook ground beef over medium heat until browned. Drain excess grease.
Sauté Onion and Garlic: Add chopped onion and minced garlic to the pot. Sauté until softened.
Add Ingredients: Stir in black beans, kidney beans, corn, diced tomatoes, Rotel, taco seasoning, ranch seasoning, and beef broth.
Simmer: Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes, stirring occasionally.
Adjust Seasoning: Taste and adjust seasoning as needed.
Serve: Serve hot with desired toppings.
