For the Potatoes:

  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Taco Topping:

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/3 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the Potatoes: Scrub the potatoes, prick them with a fork, rub with olive oil, sprinkle with salt, and bake for 45–60 minutes until tender.
  3. Cook the Beef: Brown the ground beef in a skillet, drain excess fat, add taco seasoning and water, simmer for 5 minutes.
  4. Assemble: Slice open the cooked potatoes, fluff the insides, top with taco beef, cheese, sour cream, salsa, green onions, and cilantro.
