Taco Mac is a delicious and easy one-pot meal that combines the flavors of tacos with creamy macaroni and cheese. This cheesy Tex-Mex dish is perfect for a quick weeknight dinner that the whole family will love.

For the Taco Mac:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1 (10-ounce) can diced tomatoes with green chiles
  • 1 cup salsa
  • 2 cups beef or chicken broth
  • 2 cups uncooked elbow macaroni
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • chopped green onions and cilantro for garnish

Instructions

  1. Cook the Meat: In a large skillet, heat olive oil, then brown the ground beef. Add onion and garlic, cook until softened.
  2. Add Ingredients: Stir in taco seasoning, diced tomatoes, salsa, broth, and macaroni. Bring to a boil.
  3. Simmer: Reduce heat, cover, and simmer for 12–15 minutes until pasta is tender.
  4. Finish: Remove from heat, stir in cheese and sour cream until creamy. Garnish with green onions and cilantro.

Notes

  • Top with crushed tortilla chips or jalapeños for added crunch and heat.
  • You can use whole wheat or gluten-free pasta for dietary preferences.
