Ingredients

Macaroni:

8 ounces elbow macaroni,

Ground Beef Mixture:

1 tablespoon olive oil, 1 pound ground beef, 1 small onion diced, 2 cloves garlic minced, 1 packet taco seasoning or 2 tablespoons homemade taco seasoning, 1/2 cup water, 1 can (10 ounces) diced tomatoes with green chilies drained,

Cheese Sauce:

2 cups shredded cheddar cheese, 1/2 cup milk, 1/4 cup sour cream, salt and black pepper to taste, fresh cilantro for garnish

Instructions

  1. Cook the Macaroni: Cook the macaroni according to package instructions until al dente, then drain and set aside.
  2. Prepare Ground Beef Mixture: In a large skillet, heat olive oil over medium-high heat and cook the ground beef until browned. Add diced onion and garlic, cooking for 2–3 minutes until softened. Stir in taco seasoning and water, simmering until slightly thickened. Mix in diced tomatoes with green chilies and reduce heat to low.
  3. Combine Ingredients: Add the cooked macaroni to the skillet, followed by shredded cheddar cheese, milk, and sour cream. Stir until the cheese is melted and everything is well combined. Season with salt and black pepper to taste. Garnish with fresh cilantro before serving.

Notes

  • For extra spice, add a pinch of cayenne pepper or diced jalapeños.
