Dough:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (cold and cubed)
  • 1 large egg yolk
  • 12 tablespoons ice water (as needed)

Instructions

  1. Mix Dry Ingredients: In a food processor, pulse together the flour, powdered sugar, and salt.
  2. Add Butter: Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Combine Wet Ingredients: Add the egg yolk and pulse until incorporated. Add ice water, one tablespoon at a time, pulsing just until the dough starts to come together.
  4. Shape and Chill: Turn the dough out onto a lightly floured surface and knead gently into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  5. Prepare Crust: Roll out the chilled dough and press into a tart pan with a removable bottom. Trim any excess and prick the bottom with a fork. Chill the shaped crust for 15 minutes before baking.
  6. Bake: Preheat the oven to 375°F (190°C). Bake for 18–22 minutes or until lightly golden. Let cool completely before filling.

Notes

  • For a chocolate version, substitute 2 tablespoons of flour with cocoa powder.
  • Blind baking with pie weights helps prevent puffing if using a wet filling.
