  • 2 cups mashed sweet potatoes, cooked and cooled
  • 3/4 cup brown sugar, packed
  • 1/2 cup evaporated milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • Whipped cream for topping (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Prepare the Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form an even crust. Bake for 10 minutes, then remove from the oven and set aside.
  3. Make the Filling: In a large mixing bowl, whisk together the mashed sweet potatoes, brown sugar, evaporated milk, eggs, vanilla, cinnamon, nutmeg, ginger, and salt until smooth. Pour the filling over the pre-baked crust and smooth the top.
  4. Bake: Bake for 40–45 minutes or until the center is set and a toothpick comes out clean.
  5. Cool and Chill: Let the bars cool completely in the pan, then refrigerate for at least 2 hours before slicing.
  6. Serve: Serve chilled or at room temperature with a dollop of whipped cream if desired.
