4cups diced pineapple
1cup water
2cups granulated sugar
1 jalapeño, seeded and diced
1/4cup apple cider vinegar
1 packet powdered pectin
Instructions
Prepare the Pineapple: In a blender, pulse the diced pineapple until smooth.
Cook the Jelly Mixture: In a saucepan, combine the blended pineapple, water, sugar, jalapeño, and apple cider vinegar. Bring to a boil.
Add the Pectin: Stir in the powdered pectin and continue to boil for 1-2 minutes, stirring constantly.
