3/4cup packed brown sugar
2 large eggs
1/3cup plain Greek yogurt or sour cream
1 1/2cups mashed ripe bananas (about 3-4 medium)
1 teaspoon pure vanilla extract
3/4cup semi-sweet chocolate chips (plus extra for topping, if desired)
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with parchment paper.
Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
Combine wet ingredients: In a large bowl, mix melted butter and brown sugar. Add eggs, Greek yogurt, bananas, and vanilla extract, and stir until smooth.
Combine dry and wet: Gently fold the dry ingredients into the wet mixture. Stir in chocolate chips.
Bake: Pour the batter into the pan, top with more chocolate chips if desired, and bake for 55–65 minutes.
Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
