Ingredients

Units Scale

Sugar Cookie Crust:

  • 1 package (16.5 oz) refrigerated sugar cookie dough

Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Toppings:

  • 2 cups assorted fresh fruit (such as strawberries, blueberries, kiwi, grapes, and mandarin oranges)
  • 1 tablespoon apricot jam or honey (optional, for glaze)

Instructions

  1. Prepare the Cookie Crust: Preheat the oven to 350°F (175°C). Press the sugar cookie dough evenly into a greased 12-inch pizza pan or tart pan. Bake for 12–15 minutes until lightly golden. Let cool.
  2. Make the Cream Cheese Frosting: In a bowl, beat cream cheese, sugar, and vanilla until smooth. Spread over the cooled cookie crust.
  3. Add the Fruit: Arrange fresh fruit over the frosting in a decorative pattern.
  4. Optional Glaze: Warm apricot jam or honey, brush over fruit for a glossy finish.
  5. Chill and Serve: Chill in the refrigerator for at least 30 minutes before slicing and serving.

Notes

  • You can make the cookie base from scratch if preferred.
  • Use any combination of seasonal fruits.
  • To prevent fruit from browning, add the glaze or a light squeeze of lemon juice.
